- Dried tofu

Cooking Steps
- Dice the dried tofu, blanch in boiling water briefly, drain, and place on a plate.
- Remove the old roots from the shepherd's purse, wash thoroughly, blanch in boiling water until the color turns green, then remove, drain, chop finely, and place on top of the diced dried tofu.
- Add a small amount of sesame oil, sprinkle with fine salt, and mix well.
- (Optionally, add some soy sauce according to personal preference.)
Tips
Both the dried tofu and shepherd's purse should be blanched briefly. This helps remove the beany taste from the dried tofu and enhances the aroma of the shepherd's purse while also eliminating oxalic acid, making it healthier to eat. However, the blanching time should not be too long.
